Mesquite powder is a rather new discovery of ours that has truly benefited our baking and raw food. A backyard BBQ may be the first thing that comes to mind with the word mesquite, but this powder comes from ground pods of the mesquite (algorroba) plant – not from the wood of the tree itself.
Mesquite powder bears a sweet flavor- almost like a coconut and maple hybrid. Some say it adds a malty-ness to smoothies, and in our opinion it creates the perfect faux-caramel flavor. We use this ingredient mainly as a sweetener and thickener. For those of you who aren’t yet keen on stevia’s flavor, we’ve been told mesquite balances it out quite well.
Besides its flavor qualities, this stuff is full of essential nutrients including calcium, magnesium, iron, zinc and potassium. It also happens to be gluten-free and rich in lysine. Mesquite powder can be used as a partial substitute in baking recipes- just replace ¼ of whatever flour with mesquite flour to up the nutrient density. It also bears a great flavor when raw, so there’s no need to cook it. Raw chefs love this stuff and you’ll often see it as a main ingredient in raw deserts or power balls.
Want a super simple caramel substitute? Blend a dozen soaked dates with 2 tablespoons of mesquite powder and dip away.
Ojio brand offers a 2 oz baggie that you can pick up from Mother’s Market for only about $3.95. Considering it was a brand new purchase for us, it’s a perfect sampler size compared to paying $15 for a larger quantity. We’ve been sprinkling a half-teaspoon into smoothies or other concoctions and the little bag seems to be lasting a while.
