This article is going to address a couple of misconceptions: healthy food can’t be delicious, and more specifically, you can’t have delicious meals without cheating. I am going to take you through a 3-course “date night dinner” that will save many of you out there from falling into a food coma and feeling guilty when trudging through our gym doors come Monday. These meals are made from wholefoods. They are insanely delicious, inexpensive (especially compared to going out to eat) and of course healthy.
Course 1: Appetizer - Muscles from Brussels
This Brussels sprouts recipe is delicious, tastes way to good to be healthy.
Fun fact: Brussels sprouts are a member of the brassica family of vegetables that includes Broccoli, kale and cabbage. Brussels sprouts are high in liver detoxifying, anti-cancer compounds such as Glutathione, indole-3-carbanol, Diindolymethane (DIM), sulforaphane, selenium and vitamin C.
The inspiration for this dish I must admit was a total surprise. I used to hate Brussels sprouts and generally chose to eat other forms of greenery that I saw as more palatable or as I used to say, less unpalatable. Unfortunately I don’t love vegetables, I either grin and bare them or come up with creative ways to make them taste yummy like in this article. To my surprise, when I reluctantly first tried a pan-fried Brussels sprouts recipe at a restaurant on the waiter’s insistence, I was shocked at how amazing the dish tasted. Since then I have been playing around with my own variation of this recipe.
- 2 cups sliced Brussels sprouts sliced
- 1 cup chicken diced men, ¾ cup diced women
- 3 slices organic bacon chopped
- Juice 1 lemon
- ¼ cup pine nuts or raw almonds
- ¼ cup diced onion
- ¼ cup crushed garlic
- 1 tablespoon white wine vinegar
- Ground Black pepper and Himalayan salt to taste
- 1 tablespoon butter
Heat ½ tablespoon butter in pan. Stir fry chicken and bacon on high until cooked. Remove and place in warming draw. Add ½ tablespoon butter to pan. Add Brussels sprouts and fry on high until “brown tinges” appear on outside of Brussels sprouts slices. Add garlic, onion, vinegar and lemon juice and stir-fry for 2-4 minutes. Add chicken, bacon and pine nuts and stir-fry for another minute. Serve and enjoy.
Course 2: Main Meal- Cream the Chicken Salad:
This dressing is what makes this meal. It is truly amazing.
Fun fact: Research shows that crushing garlic and leaving it sit for at least 30 minutes releases an enzyme aliciinase, which produces the anti-pathogenic (mostly anti-fungal, antibacterial) compound call aliciin. The same research shows that consuming crushed garlic can decease respiratory illness symptoms by up to 60%.
Creamy Pesto Ranch Chicken Coleslaw
- 4oz spinach
- 6 oz diced boneless chicken breasts or thighs for women, 6oz for men.
- ½ tablespoon butter to cook
- 2 tablespoons dried cranberries (optional)
- Himalayan salt and black pepper to taste
Creamy Pesto Ranch Salad Dressing
- 2 tablespoons raw cashews (soaked in water for 8-12 hours)
- 1 tablespoon soft goat cheese
- ¼ cup chopped basil
- Juice of 2 lemons
- 1 clove fresh crushed garlic
- 1 small shallot chopped
- 1 cup olive oil
- ½ teaspoon black pepper
This one is easy. Heat butter in pan and stir fry chicken until cooked. Add Pepper and Himalayan salt to taste. Place all Green leafy vegetables in Bowl. Place all salad dressing ingredients in blender or similar. Blend until ingredients are smooth. Place chicken and dried cranberries on the greens in a bowl and add salad dressing. Mix through and serve.
Course 3: Desert - Dating the Pig
My corny tittle probably doesn’t sound appetizing but I assure you this is sinfully good. So good you may see an O-face or two when these are consumed (possibly a good thing if you are with your significant other). These are also very simple to make. You will need-
- 6 slices of organic bacon
- 6 meejool dates
- Soft goat cheese (same as in salad dressing)
- 6 toothpicks
- 1 tablespoon butter to fry
Instructions: Take dates and remove pits. In the hole where pits were use your finger to make a larger hole place a small chuck of goat cheese in there. Wrap the date around the cheese. Wrap the dates tightly in the bacon strips and secure with toothpicks. Heat pan on low and add butter. Fry Bacon on all sides until bacon is cooked. Serve and blow your mind.
